with latest version of ehcp (0.29.07) spamassassin is automatically installed.. But i am not sure if this works directly, out of box.
Currently, i dont think to develop something special, but use Ubuntu's libraries for this, for example, when fully supported by Ubuntu, i plan to include amavis, clamav and so on..
I heard that Ubuntu plans to integrate spam protection with 9.10 easily, automatically, when it is released, i will include it..
Almost all programs in ehcp are installed just like as you install from apt-get or aptitude or synaptic.
So, they are all programs of Ubuntu/debian repository.
This means: you can install aditionally any program, for ex spam related programs..
When you update/upgrade your server (aptitude update ; uptitude upgrade) then, all programs updated in your server (except ehcp itself, webmail, phpmyadmin inside ehcp)
For ex, apache, dns, bind, mysql and so on... all updated when you update your server..
This is same reason, when anybody installs ehcp, gets latest version of apache, dns, mysql from ubuntu/debian repositories...
Some existing/requested features of ehcp are in http://www.ehcp.net/?q=node/233

No, it is not installed with ehcp,
you may install it in the usual way of apt-get...
So the same for firewall.
